Daily Final english 2

Alhamdulillah, we have ended this final, you could say the success of the production, well, although there are a few obstacles, but we can handle it well, at least we are all happy ending 5b MTB.

This moment, maybe only we know what we feel, what we have done until the end there are no words that can be revealed only a sense of relief and lepasss bebass ...
but there will be many phases waiting for us, hopefully we will continue to be the same MTB 5 b at the same time. Graduated :)

our last day of preparation for the food we will serve at the event total of all food + 500 proportion of jalangkote, sambusa, mochi, tape cake, kueku, coconut sugar, coto Makassar, kimochix, skipjack fufu, makassar sushi along with saraba drinks, coconut ice, etc. most of these foods are almost 98% complete. we need extra energy and heart for the final finals so that tomorrow we end successful because there is still much to be done.

Daily Mille Crepe english 2

Day-02 peak.
Let's continue with the material yesterday. I arrived earlier than other friends, took out all the ingredients from the chiller, took the lobster and fish stock from the frezzer. Made tomyam consisting of lemongrass, galangal, orange leaves, chili, onion, shallot-garlic and do not Forget the fish stock, all of these ingredients are saute onion, shallot until fragrant, add stock, add lemongrass, galangal and seasoning cooked to boiling, turn off lift and set aside.
then my friend named Nabilah made a dressing which was thai sauce and tartar sauce. it is very easy to make these dressings and the ingredients are quite easy to find in Makassar except the following coriander how to make Thai sauce:

Today's material is quite unique, we will fight with four other groups making creations with lobster as the main ingredient and the winners will get a prize of 400 thousand * rather to buy internet data. It's easy to bet through social media by uploading photos through "Instagram" taken the coolest photo and gets the most likes that is the win. We were given two days.

Day -01 prepratiaon.
the first thing I did was choosing a medium sized fresh lobster weighing + 1kg not only that I also took clams, mussels and prawns. for lobster, I just keep the freezer first to keep it fresh and tomorrow I will process it.
then make fish stock for tomyam soup.
I will make the rest the next day so that the food will remain fresh and tasty.

this time our material themed Modernist food where I raised a famous mochi cake in Japan. Mochi is made from glutinous rice which will be pounded until soft and sticky, then shaped into a round. Mochi is usually made and eaten during traditional Mochitsuki celebrations or can be called a new Japanese tofu celebration.

now I making mochi with an Indonesian flavor using stuffing from sticky rice tape cream. the material is also a homamade that I made myself. So let's take a peek at the mochi tapei recipe as follows:
ingredients
rice flour
sugar
water
and coloring to make it more interesting
stuffing material
white cream
milk
mashed glutinous rice tape
moc: mix all ingredients

How to make:
for mochi mixture, mix all ingredients into one container and then give the coloring according to taste, stir until the mixture is even.
Pour into a heat-proof bowl then steam for 15 minutes. Lift and chill
roll the dough layer until it has a thickness of 1mm, print and insert the tape filling to taste, cover tightly and neatly
then put it into the frezzer for 1 hour.
after that serve mochi in a cold state.

That is my target for this week and there is still a long way to go in the pastry that I will try. Starting yesterday and today I am still trying to make pia until it is rated at the best hahaahaa ..
still the same type as yesterday only there was a slight correction of the shape of the pia by weight on the flour of ingredient A 12g while material B 5g then molding round and then soaking with oil for 5 minutes. After that, fold 3x to have a layer.


Now this technique is rather difficult because the dough dries quickly so it will be difficult to cover it down perfectly. the point of error usually occurs in the ingredients A dough because I made it like a long dough of bread dough hard when add filling will also be difficult to cover, this bad result will be seen at the last step bake. The chocolate filling will melted out and also the bottom will feel very hard like a rock.


It's okay at least the experiment this time I know better where my mistakes are and learn again.

we entered pia material, which I already have references from the website and occasionally learn some pia making techniques on youtube. And finally we can conclude, the following recipe pia with chocolatte filling

ingredient A
hard flour 165g
sugar 30g
100ml water

ingredient B
soft roll 65 g
2sdt butter
25ml oil

Choco filling
dark chocolate
butter
flour

In making this pia is quite complicated if we have no reference at all and we need to carefully measure the ingredients so it needs to be detailed every step by step because it will affect the baking process. Making pia there are two techniques that are combined namely between croissants and martabak. Where B is immersed in oil a few minutes and then drained, the croissant technique is carried out during the rolling process which is repeatedly made to produce hundreds of layers. after getting the layer then we put the choco according to taste and close it back neatly.

alhamdulillah kami telah berakhir final ini bisa dibilang succes production yaah walaupun ada sedikit kendala tapi kami bisa mengatasinya dengan baik setidaknya kami semua MTB 5b happy ending.

Moment ini,mungkin hanya kami yang tahu apa kita rasa ,apa yang telah kita lakukan sampai akhir tak ada kata yang bisa diungkap hanya rasa lega dan lepasss bebass...
tapi akan banyak fase berikut yg menunggu kita semoga kita MTB 5 b tetap sama juga bersamaan Lulus .Aminnn :)

Hari terakhir kami preparation tuk makanan yang akan kami sajika di events total semua makanan +500porsi dari jalangkote,sambusa,mochi,tape cake,kueku,gula kelapa,coto makassar, kimochix,cakalang fufu,sushi makassar beserta minuman saraba,es kelapa,dll semua jenis makanan ini sebagian besar hampir selesai 98%. kami perlu ekstra tenaga dan hati untuk final akhir ini agar esok kami berakhir sukses karna masih banyak yang akan dikerjakan.

Hari ini masih dengan tema yang sama milles crepe pallu butung.waktunya finishing decoration milles agar tidak terlalu hambar saya mengabungkan dua warna yakni ori juga pink pisang kukus saya slice tipis .
Crepe kami tata dengan lapisan cream pallubutung juga menambahkan pisang dengan menyusunya dengan rapi.Setelah itu kami cover kembali dengan cream putih dan garnish apa adanya .jujur untuk basic decor bidang pastry saya masih pemula banyak hal yang harus saya pelajari didunia manis ini.

Pada saat presantation,kata dosen kami salah pada saat filling seharusnya kami mashed pisang dan mengabungkan dengan cream jadi saat dimakan ada kejutan pada setiap gigitan dan terasa pallu butung tapi semuanya lumayan lapisan ratusannya dapat juga rasa manis pas.

okey guys hari ini kita membuat kue lezat yang berasal dari Prancis adalah Mille Crepe. Mille berarti ribuan yang mengacu pada banyakanya lapisan crepe yang akan terlihat saat memotongnya untuk disajikan. Kue ini memang terdiri dari lapisan-lapisan crepe tipis ditambah olesan cream di setiap helainya. Untuk menikmatinya, Mille Crepe lebih enak dihidangkan dalam keadaan dingin. Kue ini sebenarnya sangat mudah dibuat, Anda hanya harus sabar karena akan membuat banyak lapisan crepe yang tipis. Namun kesabaran Anda tidak akan sia-sia, karena kue ini sungguh lezat. Selain itu, kue ini bisa menjadi alternatif untuk Anda yang ingin membuat kue tanpa menggunakan oven.

Tapi milles ini beda dengan lainnya kami membuat lebih fusion lebih modernist juga rasa tradisional dengan citarasa khas makassar " Palllu butung" membuat perbedaan yang sempurna. Jadi hari ini kami hanya preparation bahan saja dan finishing esoknya.

okey guys langsung saja kita melanjutkan cerita kemarin.....
Day -02 puncak.
Mari kita lanjut materi kemarin.Saya datang tiba lebih awal dari teman lainnya,mengeluarkan semua bahan dari chiller mengambil lobster juga fish stock dari frezzer .Membuat tomyam yang terdiri dari bahan serai,lengkuas,daun jeruk,cabai,onion ,shallot-garlic dan jangan lupa fish stocknya semua bahan ini kami saute onion,shallot hingga harum masukkan stock tambahkan serai,lengkuas dan bumbu tomyam masak hingga mendidih,matikan angkat dan sisihkan.
kemudian teman sya bernama Nabilah membuat dressing yaitu thai sauce dan tartar sauce. sangat mudah membuat dressing ini dan bahannya cukup mudah ditemukan dimakassar kecuali coriander berikut cara pembuatan Thai sauce :

Untuk Lobster kami marinade dengan perasaan lemon diamkan beberapa menit. Siapkan garlic-shallot,ginger,onion (slice all ) dll saute semua bahan dengan menggunakan wook api besar agar aromanya harum fungsi dari wok sendiri masukkan lobster beri seasoning juga berbagi sauce chinese.Masak hingga lobster berubah warna dan matang. okey guys kembali lagi di bloger ini,materi hari ini cukup unik,kami akan bertarung dengan empat kelompok yang lain membuat kreasi dengan bahan utama lobster dan yang menang akan dapat hadiah 400ribu *lumayan buat beli kouta data internetan. Sangat mudah kita bertaruh lewat media sosial dengan upload photo melalui "Instagram" taken photo paling keren dan yang paling banyak mendapatkan likes  itulah pemenangannya.kami diberi waktu selama dua hari.

Day -01 prepration.
hal yang pertama saya lakukan memilih lobster segar yang berukuran sedang dengan berat +1kg tidak hanya itu saya juga mengambil clam,mussels dan prawn. untuk lobster saya hanya keep dulu difreezer agar tetap segar dan besok saya baru mengolahnya.
selanjutnya membuat fish stock untuk kuah tomyam.
sisanya saya akan buat esok harinya agar makanan ini tetap fresh dan enak.

kali ini materi kami bertema Modernist food yang dimana saya mengangkat mochi kue terkenal di jepang.Mochi terbuat dari beras ketan yang nantinya akan ditumbuk hingga lembut dan lengket, kemudian dibentuk jadi bulat. Mochi biasanya dibuat dan dimakan pada saat perayaan tradisional Mochitsuki atau bisa disebut dengan perayaan tahu baru Jepang.

kini saya akan membuat mochi dengan cita rasa indonesia yang menggunakan isian dari krim tape beras ketan. bahannya juga homamade yang saya buat sendiri. Nah yukk intip resep mochi tapei sebagai berikut :

bahan
tepung beras
gula pasir
air
dan pewarna biar tambah menarik

bahan isian
cream putih
susu
tape beras ketan yang sudah dihaluskan
moc: mix all ingredients
cara membuat:
untuk adonan mochi campur semua bahan menjadi satu kedalam wadah lalu beri pewarna sesuai selera,aduk hingga adonan rata.
tuang kedalam bowl anti panas lalu kukus selama 15 menit. Angkat dan dinginkan
roll layer adonan hingga memiliki ketebalan 1mm,cetak dan masukkan isian tape secukupnya,tutup rapat dan rapi
kemudian masukkan kedalam frezzer selama 1jam.
setelah itu sajikan mochi dalam keadaan dingin.

kembali lagi di blog yang masih sama, di mana hari ini kami akan mencoba kembali membuat pia.
Itulah target pencapaian saya diminggu ini dan masih panjang perjalanan pastry yg akan saya coba. Mulai kemarin dan hari ini saya masih mencoba membuat pia sampai dilevel pia the best hahaahaa..

masih direcipe yang sama seperti kemarin hanya saja ada sedikit koreksi shape pia dengan berat pada flour bahan A 12g sedangkan bahan B 5g lalu mould round and kemudian rendam dengan minyak selama 5 menit. Setelah itu folding sebanyak 3x agar memiliki lapisan.

Nah diteknik ini agak sulit karna adonan cepat mengering hingga akan susah cover down dengan sempurna. titik kesalahan biasanya terjadi pada adonan bahan A karena saya membuatnya seperti adonan roti yang lama kelaman keras pada saat add filling juga akan susah tuk cover,hasil buruk ini akan terlihat pada saat step terakhir bake. Isian coklat akan melted keluar dan juga bagian bawah akan terasa sangat keras seperti batu.

Tak apa setidaknya eksperimen kali ini saya lebih tahu dimana letak kesalahan saya dan belajar kembali.

kami memasuki materi pia,yang dimana saya sudah memiliki referensi dari website dan sesekali mempelajari beberapa teknik pembuatan pia di youtube. Dan akhirya kami dapat menyimpulkan , berikut recipe pia dengan filling chocolatte

Dalam pembuatan pia ini cukup rumit jika kita tidak ada referensi sama sekali dan kita perlu menakar ulang bahan dengan teliti jadi perlu adanya detail setiap step by step karena itu akan berpengaruh pada saat proses baking. Pembuatan pia ada dua teknik yang digabungkan yakni antara croissant dan martabak. Dimana bahan B direndam kedalam minyak beberapa menit lalu tiriskan, teknik croissant dilakukan saat proses rolling yang dilakukan berkalikali hingga menghasilkan ratusan lapisan. setelah mendapatkan lapisan barulah kita masukkan choco sesuai selera dan rapatkan kembali dengan rapi dan tidak ada lagi celah(bocor penyebab keluarx choco yg lumer )

back on my blog, today is the second we prepare for our event which will take place on Thursday 28 November 2019.

Today I have an assignment to buy all the packaging for foods made by friends. Before I left, I asked the food section to be biased to know the packaging needed. After I found out everything, I left.

I went to Agung, Lotte Mart, Gelael, and Vi & Vi. When I left, I had to call back friends on campus so that the packaging I bought was what they wanted. After I finished shopping, I returned to campus to help prepare.

back on my blog. Today is our last week in semester 5 because this week we have entered the final exam. Our final this time is somewhat different from our seniors, if our seniors usually make a pastry table, this time we have to create an event where we will be given capital of 3 million from Mr. Jaya and we must be biased to return it.

Today is the first day we prepare, actually yesterday we started to prepare the ingredients. And today I checked all the missing ingredients. Because there was still a lot of need, I finally went shopping for these ingredients.

I go to markets, lotte, supermarkets, etc. When I bought all the materials, I went back to campus so that my friends could continue their preparation.

back on my blog, today is the third day to ferment our tape. Because Mr. Jaya said yesterday, our Tape still wants to be fermented for another day. Finally, when we were all in the kitchen, my group friend and I gave it to Pak Jaya again, and Pak Jaya said that even our sweet potato and black rice tape was good.

After Mr. Jaya said that our tape was good, my group friends and I started thinking about making modern food. And finally we decided to make mochi for further material.

But before we went home, we also made food for the nation's children. after food the nation's children, we do general cleaning and then go home.

is back on my blog, today my group is making tape again. Today we told Dharma to bring the tape because it will be examined by our lecturer, Mr. Jaya. When we brought it to Pak Jaya, we immediately took a spoon so that Mr. Jaya could try it.

Apparently the word Mr. Jaya is still not good, or still want to be fermented. Finally we returned to bring our tapes home, so they could be fermented again.

But before we went home, we also made food for the nation's children. after food the nation's children, we do general cleaning and then go home.

is back on my blog, today my friends and I have entered tape material. Where today we have to make a tape. The first taper is the tape from black glutinous rice and the second tape from the sweet potato. Because, when we have succeeded in making the tape we will enter the modern food material which is the main ingredient is the tape from which we made.

After the group division, my group and friends started to look for ways to make a tape on Google or on YouTube. After we watched, my group friend and I went to the market to look for the yeast.

Apparently in the market Pa'baeng-baeng does not sell the yeast. Eventually we went to the pamai wedge, but didn't find it either. Finally we went to the market on Sunu Street. And Alhamdulillah we even got the yeast. Shortly thereafter, we went to Dharma's house to make the tape. When finished, we put it under his darma bed.

is back on my blog. Today is the fourth day of the cave and my friends to do the fourth conversation also to make a layer cake legit or commonly also called spoekuk cake. Today, my group and friends will look for new recipes again and again, because our recipes yesterday failed. When we get a new recipe, we start preparing.

When we started weighing all the ingredients, I sent my male friend to turn on the oven and salamander to use. This time I stirred all the ingredients until blended. After being flat, I put the mixture into the triangular paper. then start pouring the mixture into the mold.

After pouring it, we put it in the salamander so that the top is cooked. After cooking, we iron and then pour the mixture again. We do it like that until the mold is full. When the mold is full, we use the layer cake for about 30 minutes. Then when finished, we also gave a look to Pak ical and Alhamdulillah, the legit layer of my group was successful.

Yuhuuuu, my friends are back on my blog. Today as usual I will tell my experience during this day. Today's material is Lapis Legit. Before we made a legit layer cake, as usual we would have divided into several groups. After group division, we immediately started to make the cake.

Lapis legit is one type of traditional Indonesian wet cake. Before preparing me and my group friends start looking for the recipe first. After we finished searching for recipes, we started making them.

When we made it, we felt bored because the legit layer cake had to be cooked little by little. And in the end my group had failed. So we have to repeat it tomorrow.

Back again on my blog, where today I will recount my activities on campus. Today is the fourth day or the last day of this week's practice and next week we will go back to the theory week. For today my group has no more responsibilities that we have to do, we only help other groups like group 2 that do fast food and group 3 will make croissants again.

In the morning I only prepared ingredients for the blessing on Friday which we always do to help those who are in need of food. After finishing preparing the ingredients I went into the pastry to see seniors making croissants. Even then, I couldn't see it for long because group 2 needed help so I immediately helped them first.

After everything is done from fast food, croissants and cuisine of the nation, we pray midday first after that we have lunch.

Back again on my blog, today I will tell my activities again in the kitchen. Today has entered the third day where operational returns to normal as is in accordance with the existing curriculum on campus. My group was busy with preparing for fast food on Thursday and for group 3 busy with croissants, which group 3 had to make the perfect croissants.

I arrived around 7:10. to prepare in advance, to make carrot cream soup, after all the ingredients are there, While waiting for the carrots on my cake, I helped other friends to complete their tasks to get them done faster.

A few moments later, the restaurant was opened but we were no longer at the food checker like last semester. We prepared 20 meals and even then 20 of them didn't come out, maybe only about 5 servings.

back again on my blog, as usual I will tell my activities in the kitchen. For today, I will tell you about the activity on Tuesday, where group 1, my group, will prepare for fast food tomorrow, the food from various countries. We started preparing around 09.00 that even group 1 did not prepare because our menu only had 3 types of food.

After the preparation is complete, I go to group 3 to see them making croissants where my group will get their turn but the time is still unknown. After I helped a little in group 3 I cleaned the area that looked dirty to keep it clean.

While group 3 held their croissants, my group underwent a change of plans, where tomorrow fast food was not carried out but all meals that were originally for fast food bakanlan became a table d'hote menu for restaurants as many as 20 servings.

Yuhuuuu kembali lagi di blog saya, hari ini adalah kedua kami prepare untuk acara kami yang akan berlangsung pada hari kamis tanggal 28 November 2019.

Hari ini saya memiliki tugas untuk membeli semua packaging untuk makanan-makanan yang dibuat teman-teman. Sebelum saya pergi, saya menanyakan ke bagian seksi makanan agar bias mengetahui packaging yang dibutuhkan. Setelah saya mengetahui semuanya, saya pun pergi.

Saya pun pergi ke Agung, lotte Mart, Gelael, dan Vi&Vi. Saat pergi, saya sempat menelfon kembali teman-teman di kampus agar packaging yang saya beli sesuai dengan keinginan mereka. Setelah saya selesai belanja, saya pun kembali ke kampus untuk membantu prepare.

kembali lagi di blog saya. Hari ini adalah pekan terakhir kami di semester 5 karena pekan ini kami sudah memasuki ujian final. Final kami kali ini agak berbeda dengan senior-senior kami, kalau biasanya senior kami membuat pastry table, kali ini kami harus membuat event yang mana kami akn diberikan modal sebanyak 3 jt dari Pak Jaya dan kami pun harus bias mengembalikannya.

Hari ini adalah hari pertama kami prepare, sebenarnya kemarin kami sudah mulai untuk prepare bahan-bahan. Dan hari ini saya mengcek semua bahan yang kurang. Karena masih banyak diperlukan, akhirnya saya pun pergi belanja bahan-bahan tersebut.

Saya pergi ke pasar, lotte, supermarket, dll. Saat semua bahan sudah saya beli, saya pun kembali ke kampus agar teman-teman bias melanjutkan prepare_an mereka masing-masing.

Daily Tape 3

Assalamualaikum Wr. Wb

kembali lagi di blog gua, hari ini adalah hari ketiga untuk memfermentasikan tape kami. Karena kata pak jaya kemarin, Tape kami masih mau difermentasikan sehari lagi. Akhirnya, saat kami semua sudah masuk di kitchen, saya dan teman kelompok saya pun memberikan ke pak jaya lagi, dan kata pak jaya pun tape ubi dan tape beras ketan hitam kami sudah bagus.

Setelah pak jaya mengatakan tape kami bagus, saya pun dan teman kelompok mulai berpikir untuk membuat makanan modern food. Dan akhirnya kami pun memutuskan untuk membuat mochi untuk materi selanjutnya.

Tetapi sebelum kami pulang, kami pun membuat makanan anak bangsa. setelah makanan anak bangsa, kami pun melakukan general cleaning lalu pulang.

Daily Tape 2

Assalamualaikum Wr. Wb 

kembali lagi di blog saya, hari ini kelompok saya kembali membuat tape. Hari ini kami menyuruh darma untuk membawa tape tersebut karena akan diperiksa oleh dosen kami yaitu Pak Jaya. Saat kami membawanya ke Pak Jaya, kami pun langsung mengambil sendok agar Pak Jaya dapat mencobanya.

Ternyata kata Pak Jaya masih belum enak, atau masih mau di fermentasikan. Akhirnya kami pun kembali membawa pulang tape kami, agar bisa di fermentasikan kembali.

Tetapi sebelum kami pulang, kami pun membuat makanan anak bangsa. setelah makanan anak bangsa, kami pun melakukan general cleaning lalu pulang.
